As far as I am aware, it has always been the date of manufacture, but this is not straightforward to prove, so normally the date used will be the date of first registration.
Anomalies will arise, particularly if some misguided person has transferred the number plate to a more modern vehicle and the car has been issued with an "age appropriate" registration and that transfer date will appear as the date of first registration. Some of these re-registrations are quite inappropriate such as [123 AGB] (example only) on a 1932 Austin Seven. Registration Number issued about 1959 on a vehicle built in 1932.

you can't do anything until the car is ready for the road.
Does having a first registered date mean you have a V5C?
If you have a valid V5c then you can ignore most of the the registration guidance below and jump to the paragraphs refence year of manufacture and your obligations of road worthiness.
If not you will need the club to send their appointed specialist member to date the car and provide evidence and guidance which you will need to register the car assuming you don't have a V5c.
As far as I know you will need to pay for this vehicle inspection.
Once the build date is established (- probably approximate) you will be able to apply for first (as far as the DVLA is concerned) registration.
There may be a DVLA fee to register the car.
If all is well the DVLA will then issue an age related plate.
So, on your new documents it will show date of manufacture as well as date of first registration which won't be the same obviously, but it is the date of manufacture that will make it zero tax rated and M.O.T. exempt.
The legal requirement will be on you to keep the vehicle maintained in a roadworthy condition, if you do not you will be breaking the law and invalidating your car insurance.

As you appear to have an up to date registration document on the way then a M.O.T. won't be a requirement, (although getting a voluntary one could be desirable to confirm the car is up to standard and as safe as you think it is).
Once you have have established the car is roadworthy and having got your road use insurance in place, you will need to log on to the DVLA/.GOV site to tax for the year even though you won't pay any money as the fee you enter will be £0.00 also if the car is not listed as historic on the Reg' doc you can do this at the same time ( but I think this will already be done).
